Gluten Free Oatmeal Cookies

You don’t need a reason to enjoy homemade cookies. This recipe for gluten free oatmeal cookies is our go to for parties, hostess gifts, emotional eating, it’s Tuesday, or no reason at all.

Ingredients:
 
10 ounces Old-fashioned Rolled Oats
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
5 ounces unsalted butter, at room temperature
3 ounces dark brown sugar
1 3/4 ounces granulated sugar
1 large egg
1/2 teaspoon vanilla extract
 
1. Preheat the oven to 375 degrees F.
 
2. Spread oats into a single layer on a half sheet pan lined with parchment paper. Bake until lightly toasted, 17 minutes. Allow the oats to cool for 5 minutes.
 
3. Grind half of the toasted oats in a blender until the consistency of flour. Add the baking powder, cinnamon and salt to the blender container and shake well to combine. Set aside.
 
4. Combine the butter and sugars in a bowl and mix well. Scrape down the sides of the bowl. Add the egg and vanilla extract. Mix to combine until silky. Slowly add the flour mixture until just combined. Scrap down the sides of the bowl. Add the remaining toasted oats. Stir to combine until well mixed.
 
5. Scoop the dough with a standard (greased) ice cream scoop on parchment-lined half sheet pans, leaving space between each mound, about six per pan. Bake for 12 minutes. Cool on the pans for 3 minutes then move to a rack to cool completely.
